Mulato chilies are mild to medium-hot dried Poblano chilies—green while growing, they turn dark brown as they ripen. For hundreds of years, locals in Mexico have eaten mild Mulato chilies just like we eat bananas or bell peppers! Mulato chilies have a naturally subtle smoky aroma, making them especially popular in Mexican cuisine.

Mulato is characterized by a chocolatey and slightly licorice-like aroma, with notes of cherry and tobacco. It fits perfectly in meat and vegetarian dishes, various sauces, and even creamy chocolate desserts. Casseroles are one of the classic dishes where Mulato chilies are typically used.
