The Andes cross Patagonia from north to south, dividing it in two. East Patagonia is mostly Argentinian, while West Patagonia, known for its cooler, wetter climate and evergreen rainforests, is mostly Chilean. In these lush forests grows <em>Drimys winteri<\/em>, also known as Winter\u2019s bark. Sacred to the Mapuche people, its bark, fruit, and leaves have long been used in traditional medicine and ceremonies. Sailors once used its vitamin C-rich parts to treat scurvy. The tree, with its strong cinnamon-like aroma, can reach 20 meters in height. As its white flowers ripen, they produce bluish berries with a surprising flavor: initially sweet and fruity with hints of cinnamon, followed by a gentle spiciness and a slight numbing sensation on the tip of your tongue.       <\/p>\n<p>If you notice a similarity between Patagonian pepper and Tasmanian pepper, you&#8217;re on the right track; these plants are distant relatives, making Patagonian pepper a great alternative. Like Tasmanian pepper, it isn&#8217;t suitable for a grinder\u2014we recommend crushing the required amount in a mortar or coarsely chopping it with a knife just before use. <\/p>\n<p>Patagonian pepper pairs perfectly with red meat, poultry, and game, as well as various sauces, chutneys, and stews.
