According to the USDA, the highest concentration of anthocyanins (antioxidants) is found in black elderberries—nearly twice as high as in any other berries. The anthocyanins in black elderberries are the most powerful natural antioxidants, working to protect body cells from potential damage caused by free radicals. These berries stimulate the immune system.
USE: Black elderberries aren’t as sweet or moist as raisins, but they’re a great addition to the same recipes where you’d usually use raisins (oatmeal, muffins, cookies, bread, vegetable dishes, or muesli).
