Bird’s eye – small, red chili peppers with a very hot, bold, yet sweet flavor. They’re perfect for curry sauces, meat casseroles, grilled meat glazes, and other sweet and sour dishes.

Chilies owe their heat to the capsaicin oil they contain. The capsaicin level, or the heat of chili peppers, is measured in Scoville units. For instance, pure capsaicin reaches 16 million Scovilles, the hottest known chili pepper, Habanero, ranges from 100,000 to 350,000, while Serrano is only 5,000 to 15,000.

If you happen to bite into a pepper that’s a bit too “hot” for you, remember that capsaicin is fat-soluble. A glass of milk (anything but skim) is the best way to put out the fire—not water, as you might first think.
