Description
These special peppers are found in the wild only in the jungles of Madagascar – in tropical rainforests on trees up to 20 meters high. The reddish, ripe fruits are harvested by hand, but this work is carried out by only a few farmers, and the total annual harvest does not exceed 2 tons. The flavor of Madagascar pepper is unique – slightly spicy, mildly peppery, with a noticeably growing citrus aftertaste.
USAGE: Madagascar pepper, also known as Bourbon pepper, pairs perfectly with game, lamb, pork, chicken, and turkey, as well as in dark sauces. You can also add these peppers to fish dishes and shellfish. Madagascar pepper is even used in desserts – in chocolate and cocoa creations, as well as fruit and berry dishes. Before use, we recommend coarsely crushing them or grinding them in a pepper mill and sprinkling over the dish just before serving.
