Description
Mace is the thin, pinkish covering of the nutmeg seed, most commonly used in Asian and Middle Eastern cuisines. After the mace is peeled from the large seed and dried, its pinkish color fades, and the spice takes on a light brown hue. Nutmeg and its mace have different flavors – mace is lighter and sweeter than the seed itself, yet both spices are used for similar purposes in cooking.
USAGE:Mace is used in soups, sauces, and often as a spice for wine. It’s added to pound cakes, Swedish meatballs, doughnuts, sweet potato pie, oyster stew, and barbecue sauces. Many American hot dogs contain ground mace.
