Tonka beans, also known as cumaru – a name derived from the coumarin they contain (typically 1–3%, sometimes up to 10%). Coumarin was isolated nearly two hundred years ago from tonka beans and sweet clover, providing that pleasant aroma so similar to vanilla, almonds, sweet woodruff, and hay, despite its bitter taste. That’s why tonka beans are often used as a vanilla substitute in recipes.

Tonka beans are native to Venezuela, from where they have spread and now grow throughout much of South America – mainly in Brazil, Guyana, and Suriname.

USAGE: Tonka beans pair perfectly with chocolate and chocolate-based desserts. They also taste great with berry and fruit sorbets, desserts, cakes, creams, and ice cream. For a more unique twist, try tonka beans with fish dishes, or add them to homemade mayonnaise, tomato paste, sauces, or even soup.
