Early Harvest Extra Virgin Olive Oil is produced from carefully selected 100% Koroneiki olives grown in family olive groves around Skalani, Crete, where the trees thrive in the sunny Mediterranean climate and well-drained soil. The olives are harvested at the very beginning of the season (October) while they are still green to preserve their distinct freshness and naturally high antioxidant content. They are grown following sustainable farming principles and cold-pressed immediately after harvest. This olive oil has exceptionally low acidity—only 0.2%—and more than 800 mg/kg of natural polyphenols. The result is an expressive olive oil with an aroma of fresh green herbs, notes of green almonds and artichoke, balanced bitterness, and a lively, spicy finish.
