Description
Lemongrass is an essential spice in Asian cuisine, also widely used in Western cooking. It looks very similar to spring onions, with a bulb at the end, but its stems are woodier, and its leaves are tightly arranged and grey-green. This spice has a unique aroma – when untrimmed, it offers a sweet and delicate lemon scent. The flavour of lemongrass can vary – the longer you cook it, the more intense it becomes. For a lighter, fresher lemongrass taste, add it at the end of your meal prep.
Lemongrass is also used in medicine to help combat stomach cramps, fever, and even depression.
HOW TO USE: Whole lemongrass stalks are used in savoury stews and curries, removed before serving. Chopped lemongrass is perfect for marinades, soups, and quick stir-fries. You can also use lemongrass as a flavouring for crème brûlée or in cold drinks and alcoholic cocktails.
