A natural treasure from the north of Sumatra, Indonesia’s largest island, where Andaliman pepper is harvested specifically in March. Grown wild, not cultivated, Andaliman peppers are a true rarity and the pride of the local people. Hand-picked and sun-dried, the peppers lose up to 90% of their original weight.
Andaliman peppers have an intense citrus aroma – lime and mandarin – but not an overly sharp taste. Dishes prepared with these peppers will make anyone’s mouth water, but your tongue will experience a slightly numbing effect.
Bogor Agricultural University in Indonesia has specifically recognized Andaliman peppers, finding that the shelf life of food prepared with these peppers significantly increases. It has been discovered that these peppers possess anti-microbial and antioxidant properties.
HOW TO USE: Andaliman peppers are perfect for seafood and fish dishes, chicken dishes, Asian cuisine, and various salads. The peppers create a wonderful flavor harmony with garlic, ginger, turmeric, lemongrass, shallots, lime leaves, enriching the taste of chicken and fish.
