Bird’s Eye – small, red chili peppers with a very fiery, distinctive, yet sweet flavour, making them perfect for curry sauces, meat dishes, grilled meat sauces, and other sweet and sour meals.
Chili peppers owe their heat to the capsaicin oil they contain. The capsaicin level, or the heat of chili peppers, is measured in Scoville units. For example, pure capsaicin reaches 16 million Scoville units, the hottest known chili pepper, Habanero, ranges from 100,000 to 350,000, while Serrano is only 5,000 to 15,000.
If you happen to bite into a chili that’s too hot for you, remember that capsaicin is fat-soluble. So, a glass of milk (excluding skim milk) will be the best way to extinguish the fire, not water, as you might initially think.
