Description
Mustard seeds are small, round seeds from various mustard plants, which come in different colors, ranging from yellowish-white to black. These seeds are a rich source of oil, magnesium, omega-3, phosphorus, copper, B vitamins, and protein. For example, the selenium found in them is a nutrient that helps reduce asthma symptoms, some symptoms of rheumatoid arthritis, and can even help prevent cancer. There are at least 40 different mustard plants, the most common being black mustard, brown Indian mustard, and white mustard. Black mustard is the sharpest, while white mustard, which is actually yellow, is the mildest and is used to make yellow American mustard. Brown mustard, which is actually dark yellow, is used to make Dijon mustard. White mustard seeds are primarily used in European and American cuisine, either fresh or roasted.
