Description
Sumac is a dark red spice – a product obtained from the fruits of the sumac tree. It has a pleasant, lemon-like sour aroma with a slight tang. Sumac can easily replace lemon, especially when you need acidity without the liquid. Sumac’s uses are incredibly wide-ranging – it’s perfect in fresh salads, including dressings, as well as in meat dishes and marinades (even dry rubs, which you simply rub into the meat before cooking), enriched with fresh onions or leeks. It also finds its place in fish dishes. It’s especially compatible with lamb and duck, and many love to add sumac directly to pilaf.
Sumac is also an ideal ingredient in various desserts that just beg for a touch of sourness. It’ll be delicious with curd desserts and other light-colored sweets, plus it’ll give them a brighter hue!
However, chefs and confectioners agree that sumac is best sprinkled over food just before serving!
